This is a very hands-on morning where you will learn how to use different curing techniques. If you never jointed a duck before now’s your moment to learn. It’s a very useful skill to master, as you end up using every scrap. After jointing comes the ‘cure’- this is where alchemy meets kitchen expertise. When it’s cured to perfection let the smoking begin. This is a cold smoke, giving the duck a rich, subtle, smokey, flavour. At the end of the morning, sit down and enjoy some of the produce you’ve just prepared for lunch. Your very own Charcuterie board. How smart is that?

From farmers markets to Bray High Street. This Charcuterie is the real deal. In fact, it’s Charcuterie with a British twist. They cure only British rare breed meat. Their Berkshire salami, Hogget Bresaola, Pancetta are all prize winners, and they produce small batches of deliciousness that make any picnic into a stellar feast.
These passionate artisans are based on the High Street in Bray (the perfect foody spot only an hour from London, a destination village in its own right) where you can eat in and sample the cured meat boards.
